| 1 cup | cottage cheese |
| 1/4 teaspoon | garlic powder |
| 1/4 teaspoon | onion powder |
| 1/4 teaspoon | salt |
| 1/4 teaspoon | black pepper |
| 1 package | Jones Dairy Farm All Natural Mild Pork Sausage Links, heated according to package instructions and sliced |
| 1/2 cup | shredded mozzarella cheese |
| 1/4 cup | diced green pepper |
| 1/4 cup | diced onion |
| 1 bunch | chives, diced |

Heat oven to 375°F. Grease silicone egg mold, place on a baking sheet and set aside.

Add eggs, cottage, garlic powder, onion powder, salt and pepper to a blender. Blend for 5-6 seconds, just until creamy. Do not over mix or your egg cups will deflate. Pour into greased molds.

Divide sausage, cheese, green pepper, onion and chives between each egg bit. Pour boiling water onto sheet pan until it reaches halfway up the outside of the egg mold. Bake for 30-35 minutes or until eggs are set. Let sit 10 minutes before removing from egg mold.
