Ingredients

eggs

1 cup

cottage cheese

1/4 teaspoon

garlic powder

1/4 teaspoon

onion powder

1/4 teaspoon

salt

1/4 teaspoon

black pepper

1 package

Jones Dairy Farm All Natural Mild Pork Sausage Links, heated according to package instructions and sliced

1/2 cup

shredded mozzarella cheese

1/4 cup

diced green pepper

1/4 cup

diced onion

1 bunch

chives, diced

Directions

  1. Heat oven to 375°F. Grease silicone egg mold, place on a baking sheet and set aside.

  2. Add eggs, cottage, garlic powder, onion powder, salt and pepper to a blender. Blend for 5-6 seconds, just until creamy. Do not over mix or your egg cups will deflate. Pour into greased molds.

  3. Divide sausage, cheese, green pepper, onion and chives between each egg bit. Pour boiling water onto sheet pan until it reaches halfway up the outside of the egg mold. Bake for 30-35 minutes or until eggs are set. Let sit 10 minutes before removing from egg mold.
