What is Canadian Bacon, and how is it different from ham?

Unlike the conventional bacon derived from the pig’s fattier belly, Canadian bacon comes from the center of the pig’s back – the area housing the much leaner pork loin. Canadian bacon, which has an appearance and flavor more similar to ham, is typically cured then cooked during the smoking process. Canadian bacon comes from the back of the pig, the loin, which is very tender and lean. Ham comes from leg of the pig, which is less lean than the loin. Canadian bacon is often used for breakfasts, brunch, and lunch while ham is typically use for dinner meals.
