
One-Pan Sausage, Green Beans & Potato Skillet
Quick One-Pan Sausage Dinner

| 4 tablespoons | olive oil or avocado oil, divided |
| 8 oz. | green beans, trimmed |
| 4 | garlic cloves, minced, divided |

Parboil the potatoes in salted water for 6-8 minutes or until fork tender. Drain and set aside.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add green beans and season with salt and pepper. Sauté for 2 minutes. Add garlic and cook for an additional minute. Pour water over green beans and cook for 2-3 minutes or until beans are tender. Remove and set aside.

Add 2 tablespoons oil to the same skillet over medium heat. Add the potatoes and season with salt and pepper. Cook for 3-4 minutes; add thyme and cook for an additional minute. Remove potatoes from skillet and set aside.

Add remaining 1 tablespoon oil to the skillet. Add sausage and cook for 1–2 minutes until lightly browned. Add remaining 2 cloves garlic and chili garlic sauce; cook for 1–2 minutes, adding a splash of water as needed to deglaze the pan.

Return green beans and potatoes to the skillet. Reduce heat to low and cook together for 1–2 minutes until heated through.

Garnish with fresh parsley and red pepper flakes, if desired. Serve warm.
