Directions
Coat coffee mug with nonstick cooking spray. Crack eggs into mug and scramble until fully mixed. Season with salt and pepper. Microwave on high for 40 seconds.
Remove from microwave; stir sausage into partially cooked egg. Return to microwave and cook on high for another 35 to 40 seconds. Fluff with fork before serving.
Variations: Add shredded cheddar cheese with sausage. Add cooked vegetables, such as chopped onion, peppers, tomatoes, broccoli or zucchini, with sausage.
