Spicy Sausage Croissant Breakfast Sandwich
Buttery croissants are spread with a spicy salsa cream cheese and topped with all natural turkey breakfast sausage patties, green chiles and an egg.
Cream cheese, softened
Canned green chiles
Large croissants, split in half
Mix cream cheese and salsa in a small bowl. Season with salt and pepper.
Heat a large non-stick skillet over medium-high heat. Add sausage patties. Cook until golden brown, about 2-3 minutes. Flip over and cook another 2-3 minutes until golden brown and warmed though. Set aside.
Heat olive oil in the same skillet. Crack eggs in to the skillet, leaving room between each egg. Season with salt and pepper. If you like your eggs sunny-side up, after the egg sets, spoon a little bit of the oil over the top of the egg white to cook it. Otherwise, flip the egg over for over-easy or over-medium.
Assemble the sandwiches. Spread the salsa cream cheese on each croissant. Top each bottom half with arugula, two sausage patties and an egg. Sprinkle with green chiles. Top with croissant and serve!
