Ingredients

8 slices

Jones Dairy Farm Dry Aged Bacon

1 1/2 cups

Flour

3/4 teaspoon

Salt

3 tablespoons

Sugar

1 tablespoon

Baking Powder

1 1/2 cups

Milk

3 tablespoons

Vegetable Oil

Eggs, whites and yolks separated

Directions

  1. Cook bacon and crumble. Set aside.

  2. Preheat skillet or griddle over medium heat.

  3. In medium bowl, combine flour, salt, sugar and baking powder. Make a well in the middle and add milk, vegetable oil and egg yolks.Mix just until combined.

  4. In separate bowl, whisk egg whites until they form soft peaks. Fold gently into pancake batter. Gently stir in crumbled, cooked bacon.

  5. Lightly grease griddle, then drop batter by 1/4 cupfuls onto the hot griddle. Cook until browned, flipping to cook both sides. Repeat with remaining batter. Serve with maple syrup.

Will definitely be making again and again

Beautiful, fluffy pancakes. I made a half batch and accidentally added full (2) eggs, but it still turned out perfectly, so it seems a fail-proof recipe. Will definitely be making again and again, thankyou.

This looks really good delicious. Thank you for sharing such an amazing recipe! I always prefer cooking bacon in the oven using the oven racks. It is way much cleaner and bacon turns out crispy and perfectly cooked, plus you can combine it in several recipes.
