Ingredients
- 1 (12 oz.) package Jones Dairy Farm Dry Aged Cherrywood Smoked Extra Thick Bacon
- 16 small pieces lettuce (butter lettuce, bibb lettuce, romaine)
- 16 small cherry or grape tomatoes
- mayonnaise or mayo-based sauce (think yum-yum sauce, or other chicken dipping sauce), or make your own garlic aioli (recipe below)
- Garlic Aioli:
- 1/2 cup mayonnaise
- 1 clove minced garlic
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- pinch of salt
- pinch of pepper
Directions
Preheat oven to 350°F.
Cut bacon into approximately 1” wide pieces. Place on foil-lined baking sheet.
Cook bacon until desired doneness, approximately 15 minutes.
While bacon is cooking, use a cookie cutter or rim of a small glass to cut circles from the bread. Place on a separate baking sheet and toast in the oven for 10 minutes.
Remove bacon and bread from oven.
Assemble by layering toasted rounds, aioli or mayo, lettuce leaf, 2 pieces of bacon, and top with a tomato. Repeat with remaining ingredients. Serve promptly.
Garlic aioli (if making): In a small bowl, combine mayonnaise, minced garlic, lemon juice, olive oil, salt, and pepper. Mix well.
