Ingredients

1 (12 oz.) package

Jones Dairy Farm Dry Aged Bacon

16 small pieces

Lettuce (butter lettuce, bibb lettuce, romaine)

16 small

Cherry or grape tomatoes

8 slices

Bread

Favorite mayonnaise or mayo-based sauce (think yum-yum sauce, or other chicken dipping sauce), or make your own garlic aioli (recipe below)

Garlic Aioli

½ cup

Mayo

1 clove

Minced garlic

1 Tablespoon

Lemon juice

2 Tablespoons

Olive oil

Pinch of salt

Pinch of pepper

Combine all ingredients and mix well.

Directions

  1. Preheat oven to 350°F.

  2. Cut bacon into approximately 1” wide pieces.  Place on foil-lined baking sheet.

     

  3. Cook bacon until desired doneness, approximately 15 minutes.

  4. While bacon is cooking, use a cookie cutter or rim of a small glass to cut circles from the bread. Place on a separate baking sheet and toast in the oven for 10 minutes.

  5. Remove bacon and bread from oven.

  6. Assemble by layering toasted rounds, aioli or mayo, lettuce leaf, 2 pieces of bacon, and top with a tomato. Repeat with remaining ingredients. Serve promptly.
