This sausage and kale soup is a light healthy meal that is still perfectly comforting.

ingredients
2 tablespoons olive oil
1 Package Jones Dairy Farm No Antibiotics Ever All Natural Turkey Sausage, thawed, cut into bite size pieces
1 small yellow onion, diced
4 cloves garlic, minced
1 teaspoon Italian seasoning 
1/4-1/2 teaspoon crushed red pepper flakes (optional)
6 cups chicken broth 
12 oz cauliflower rice (can be frozen)
6 cups kale, roughly chopped
1/4 cup coconut cream
Salt & pepper, to taste
 

 
DIRECTIONS

Heat olive oil in a large pot over medium heat. Add turkey sausage; cook about 5 minutes or until browned.

Add the onions and cook until soft and translucent. Add garlic and seasonings; cook until fragrant.

Add the broth, stirring to combine, and bring to a boil. Add cauliflower rice and simmer until softened, about 5 minutes. 

Stir in the kale to wilt. Add coconut cream; stir to combine. Season with salt and pepper. Simmer for another minute to combine flavors and serve hot.
