
Canadian Bacon & Veggie Quiche Cups

Ingredients
6 | Large Eggs |
2 tablespoons | Milk |
5 ounces | |
10 ounces | Baby Spinach, sautéed, coarsely chopped and patted dry |
1 cup | Vegetables (Mushrooms, Bell Pepper, Onion, Asparagus, etc.) diced and lightly sautéed |
1 cup | Shredded Cheese, any variety |
Salt and pepper to taste |

Preheat oven to 375˚F.

In large mixing bowl, whisk eggs and milk together until thoroughly combined. Stir in Canadian Bacon, spinach, cooked veggies and cheese. Season to taste with salt and pepper.

Divide evenly among muffin cups that have been coated with nonstick spray. Makes 12 regular, 6 large or 24 mini muffins.

Bake for about 20 minutes or until center is well set. Adjust baking time accordingly for larger or smaller sized quiche.

Spinach and mushroom; asparagus and roasted red peppers with Italian cheese; sautéed onions and gruyere; bell peppers, onions, mushrooms and cheddar; zucchini, bell peppers and grape tomatoes
