minced chives, divided

Greek yogurt

1/2 cup

mixed herbs (dill, mint, tarragon or basil)

1 tablespoon

lemon juice

1/2 teaspoon

lemon zest

1 tablespoon

olive oil

garlic clove

1/2 teaspoon

Dijon mustard

avocado, sliced

sourdough bread, toasted

1/2 cup

packed baby spinach leaves

Directions

  1. Prepare sausage according to package instructions.

  2. Whisk eggs with milk. Season with salt and pepper. Add 1/4 cup chopped parsley and 1 tablespoon chives. Whisk to combine.

  3. Place skillet over medium heat with 1 tablespoon butter. Add eggs and cook until scrambled and no longer runny, about 5 minutes.

  4. Combine yogurt, remaining parsley and chives, herbs, lemon juice, olive oil, garlic and Dijon in a food processor or blender until smooth. Season with salt and pepper.

  5. Assemble sandwiches. Layer scrambled eggs, sausage, avocado and spinach and sauce on a slice of bread. Top with additional slice and repeat with remaining ingredients.
