| 1/2 cup | mixed herbs (dill, mint, tarragon or basil) |
| 1 tablespoon | lemon juice |
| 1/2 teaspoon | lemon zest |
| 1 tablespoon | olive oil |
| 1 | garlic clove |
| 1/2 teaspoon | Dijon mustard |
| 1 | avocado, sliced |
| 8 slices | sourdough bread, toasted |
| 1/2 cup | packed baby spinach leaves |

Prepare sausage according to package instructions.

Whisk eggs with milk. Season with salt and pepper. Add 1/4 cup chopped parsley and 1 tablespoon chives. Whisk to combine.

Place skillet over medium heat with 1 tablespoon butter. Add eggs and cook until scrambled and no longer runny, about 5 minutes.

Combine yogurt, remaining parsley and chives, herbs, lemon juice, olive oil, garlic and Dijon in a food processor or blender until smooth. Season with salt and pepper.

Assemble sandwiches. Layer scrambled eggs, sausage, avocado and spinach and sauce on a slice of bread. Top with additional slice and repeat with remaining ingredients.
