These aren’t biscuits from a can. This recipe walks you through a simple yeasted dough that bakes up tender, golden, and sturdy enough to hold a whole meal inside. Each biscuit is stuffed with a Jones Dairy Farm Golden Brown All Natural Chicken Sausage Patty, slow-scrambled eggs, and sharp cheddar before being sealed and baked to a deep golden brown. They take about two hours start to finish, but the hands-on time is minimal and the result is genuinely impressive.
Ingredients
- 2 1/2 cups all-purpose flour
- 3/4 teaspoons kosher salt
- 1 package instant yeast
- 1 1/4 cup buttermilk
- 5 eggs, divided (1 for dough, 3 for filling, 1 for egg wash)
- 5 Jones Dairy Farm Golden Brown All Natural Chicken Sausage Patties, defrosted
- 1 tablespoon water (or milk)
- 1/2 cup shredded sharp cheddar cheese (or cheddar of your choice)
Directions
Heat oven to 400°F. Line a baking sheet with parchment paper.
Whisk buttermilk and 1 egg in a small bowl; set aside.
Whisk flour, salt and yeast in a large bowl. Add chilled butter and use a fork to combine. Make a well in the center of the mixture. Pour the buttermilk and egg mixture into the middle. Use the fork to combine the dry ingredients into the wet. The dough will be slightly shaggy.
Transfer dough to a lightly floured surface. Knead a few times until dough comes together; form into a loose ball and place back in bowl to rest for 20 minutes. Alternatively, you can use store-bought biscuit dough.
Prepare the eggs while the dough rests. Whisk 3 eggs in a medium bowl; season with salt and pepper. Melt 1 teaspoon butter in a small non-stick skillet over medium-low heat. Add eggs; use a spatula to slow-scramble the eggs until they are just set but still wet. Remove from the heat.
After the dough has rested for 20 minutes, transfer to a lightly floured surface. Roll out to a little under 1/2 -inch thick. Use a 3-inch biscuit cutter to cut 10 circles. If needed, reform the dough and roll out again to equal 10 circles.
Slightly roll out each circle so it’s a little bit bigger than the sausage patties. Place a sausage patty on half of the dough circles. Top with a tablespoon of cheese and a packed tablespoon of eggs. Cover with another dough circle and pinch the edges to seal.
Mix egg and water together.
Place stuffed biscuits on prepared baking sheet. Brush with egg wash. Sprinkle with flaked salt and black pepper.
Bake in the oven 18-22 minutes until biscuits have risen and are golden brown and crisp. Rotate the pan 180 degrees halfway through baking.
Let the biscuits rest for 3-4 minutes before digging in!
