

Million Dollar Bacon

Jones Dry Aged Extra Thick Bacon slow-baked in a sweet-spicy glaze of maple syrup, gochujang, brown sugar, and cayenne until deeply caramelized and lacquered. A showstopping side, garnish, or standalone menu item that operators can prep ahead and guests will remember.
Ingredients
- 12 oz. Jones Dairy Farm Dry Aged Extra Thick Bacon
- 3/4 cup packed brown sugar, divided
- 1/4 cup maple syrup
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 1/4 teaspoon ground ginger
Directions
Heat oven to 350°F. Line a rimmed baking sheet with aluminum foil.
Lay bacon on the prepared baking sheet in a single layer. Cook for 10 minutes and remove from oven.
Meanwhile, mix 1/2 cup brown sugar, maple syrup, gochujang, black pepper, cayenne pepper and ground ginger in a small bowl.
Spoon mixture over bacon. Return to oven and cook for 10 minutes. Flip the bacon and top with remaining 1/4 cup brown sugar. Bake until bacon is caramelized, an additional 5-10 minutes. Watch carefully as the sugar can burn.
Let bacon cool slightly on the baking sheet, about 1 minute. Use tongs to transfer to a clean sheet of parchment paper or aluminum foil. Cool for 5-10 minutes before serving.
