

Country Sausage Brunch Bowl

Scratch-Made Gravy, Jones Sausage, One Satisfying Bowl
Designed for K-12 foodservice, this Country Sausage Brunch Bowl layers roasted garlic herb potatoes, scrambled eggs, and sliced Jones Pork Sausage Links in a single serving bowl, finished with scratch-made country gravy and shredded cheddar cheese. It meets USDA meal pattern requirements and delivers the kind of warm, filling comfort food that satisfies students at any point in the school day.
Ingredients
- Brunch Bowl:
- 100 Jones Dairy Farm Pork Sausage Links
- 3 lbs., 2 oz. scrambled eggs, fully cooked
- 1 gal., 2 qt., 1 c. roasted garlic herb potatoes, chopped, skin-on
- Country Style Gravy:
- 1⅓ c. vegetable oil
- 1⅓ c. all-purpose flour
- 2 qt., 1 pt., ⅔ c. whole milk
- 2⅔ tsp. salt
- 1 tbsp., 1 tsp. black pepper, ground
- 1⅓ tsp. garlic powder
- ⅓ tsp. cayenne pepper
Directions
Preheat oven to 350°F and tilt skillet to 375°F
Place Jones Pork Sausage Links on a parchment-lined sheet pan. Bake for 8–10 minutes, until hot (165°F). Transfer to a steam table pan. Hold at 135°F or above until service.
Spread frozen potatoes evenly on lined sheet pans. Bake for 10–12 minutes, turning once for uniform cooking, until hot (165°F). Hold at 135°F or above until service.
Place scrambled eggs in a hotel pan. Cover with foil and heat for 10–15 minutes, until hot (145°F). Hold at 135°F or above until service.
Prepare the country style gravy: add oil to preheated tilt skillet. Sprinkle flour evenly over oil and stir continuously for 1–2 minutes to fully incorporate. Do not allow flour to brown. Gradually add milk while stirring constantly to prevent lumps. Bring to a gentle simmer. Cook for 5–7 minutes, stirring frequently, until gravy thickens to a smooth, pourable consistency. Add salt, black pepper, garlic powder, and cayenne. Stir until evenly blended. Cook until gravy reaches 165°F. Transfer to hotel pans. Hold at 135°F or above until service.
Assembly: place ½ cup potatoes in a serving bowl. Add 1 oz. scrambled eggs. Slice 2 sausage links into bite-size pieces and place over eggs and potatoes. Top with 2 oz. country style gravy and sprinkle with ½ oz. shredded cheddar cheese. Serve immediately.
