Chef’s Note
The batter marries quickly: shredded cabbage, sliced Canadian Bacon, red pickled ginger, eggs, flour, and dashi. The ratio of cabbage to batter is what most kitchens get wrong — it should be heavily cabbage-forward, not a thick pancake with a little cabbage in it. Aim for roughly two parts cabbage to one part batter by volume.
Cook on a well-oiled flat-top over medium heat, pressing gently to an even thickness. Flip once when the bottom is set and golden. Finish with sauces and bonito flakes tableside if your format allows it — the visual of the bonito flakes moving from the heat plays well in a casual or izakaya-style setting.
