The Menu Concept
- Jones Dairy Farm Canadian Bacon, diced and tossed with a fresh lemony broccolini pesto, spring peas, caramelized red onions, and fresh mozzarella pearls.
- Served over baby arugula with tender campanelle pasta, finished with cherry tomatoes, shaved Pecorino Romano, and toasted garlic breadcrumbs.
Chef’s Note
The broccolini pesto is the backbone of this dish and worth making in volume. Blanch the broccolini briefly, shock it, and blend with lemon zest, garlic, olive oil, and Pecorino. It holds refrigerated for several days and doubles as a spread, a flatbread base, or a sauce for grilled proteins elsewhere on the menu.
Toss the pasta to order in a warm pan with the pesto and a splash of pasta water to loosen. Add the Canadian Bacon last so it heats through without overcooking. The arugula goes down cold, underneath — it wilts just enough from the heat of the pasta without disappearing.
