Chef’s Notes
Toast the ciabatta to a firm, sturdy crumb before building. A soft or under-toasted slice will not hold up under the fillings and can turn soggy before service.
Slice the figs thin and even so they layer flat against the ham rather than piling unevenly. Uneven slices make the sandwich harder to hold and eat.
Add the honey walnut spread to the top slice of bread rather than directly onto the ham. Spreading it against the meat too early lets it soak in and lose the textural contrast the walnuts are meant to provide.
