This version swaps a tortilla for a folded pumpkin spice pancake, giving guests a fall-forward handheld that photographs well and turns fast on a griddle line.

Chef’s Notes

Fold pumpkin puree and pumpkin spice blend into the buttermilk batter gently and don’t overmix. A slightly under-mixed batter with visible streaks keeps the pancake tender; overmixing toughens it and makes the fold crack instead of bending.
