Chef’s Note
This is a bar menu item that sells itself on presentation, but it has to be executed consistently to land. The meatball should be finished on a flat-top or in a skillet to develop a caramelized exterior before it goes in the hole — a pale, steamed-looking meatball undercuts the whole visual.
Glaze the donut while it’s still slightly warm so the maple icing sets with a light sheen rather than pooling. Bacon goes on immediately after glazing, before the icing sets, so it adheres cleanly.
Pre-batch all three components separately and assemble to order — total plate time is under 90 seconds once your prep is in place.
