Chef’s Note
The triple protein stack is the identity of this burger, so execution order matters. Sear the chorizo patty first and let it rest; it will carry heat through service without drying out. Place it directly on the beef patty before the cheese goes on so the residual heat melts the pepper jack across both layers. Finish with the perfectly sweet and smoky bacon.
Elote is the balance element here. It cuts the richness of three proteins and the chipotle mayo, so don’t skip it or reduce the portion. If you’re batching elote for service, finish it with a small amount of lime juice to keep it bright under heat lamps.
The brioche bun is load-bearing. A standard bun will compress and split. Toast it cut-side down in butter until it holds structure.
