
Bacon and Tater Tot Egg Bites
A Crispy Tater Tot Crust Changes the Game
Crispy tater tots form a golden crust in each muffin cup, topped with a creamy blend of eggs, cottage cheese, cheddar, and Parmesan, plus plenty of smoky Jones Dairy Farm Dry Aged Bacon in every bite. It’s the only egg bite on our site built on an actual crust, and the only one that features bacon as the star protein rather than a topping. Make a batch on Sunday and reheat all week.
Ingredients
- 36 tater tots
- 8 slices Jones Dairy Farm Dry Aged Cherrywood Smoked Bacon Slices
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/4 cup shredded Parmesan cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
Directions
Heat oven to 400°F. Place three tater tots in each muffin cup and bacon on a parchment-lined sheet pan. Bake for 15–25 minutes, until golden and crispy.
Blend eggs, cottage cheese, cheddar, Parmesan, salt, and pepper for 30 seconds, until smooth.
Press the tater tots into the bottom of each muffin cup to create a base. Fill each cup about 3/4 full with the egg mixture.
Reduce oven to 350°F and bake for 20–25 minutes, until the egg bites are firm and fluffy. Let cool slightly before serving.
