Ingredients

2 cups

Jones Dairy Farm Uncured Ham, diced

2 tablespoons

oil, divided

2 teaspoons

minced garlic

1/2 cup

diced onion

1/2 cup

diced carrot

1/2 cup

diced celery

1 tablespoon

Italian seasoning

2 teaspoons

salt

48 oz. carton

chicken or vegetable broth

2 small

yellow potatoes, diced

1 can

white beans, drained and rinsed

1 cup

chopped kale

1/2 cup

shredded Parmesan cheese, for topping

Directions

  1. Heat 1 tablespoon oil in a large Dutch oven over medium high heat. Add ham and sauté for 2-3 minutes or until lightly browned. Remove from pan; set aside.

  2. Heat remaining tablespoon of oil. Add garlic and sauté for 1 minute or until fragrant. Add onion, carrot, celery, Italian seasoning and salt. Sauté until soft, 4-5 minutes.

  3. Add broth, potatoes and beans. Bring to a simmer, cover and cook for 15-20 minutes or until potatoes are soft.

  4. Add ham and kale. Stir until kale wilts. Divide between bowls and serve with fresh parmesan cheese or your favorite bread.
