Butter or Margarine


Medium Onion, finely chopped


Celery Stalks, finely chopped


Medium Green Bell Pepper, finely chopped

1 (16 oz.)

All Natural Pork Sausage Roll


Mushrooms, thinly sliced

2 cloves

Garlic, minced

1/2 teaspoon

Dried Thyme

1/2 teaspoon

Dried Basil

Hot Pepper Sauce, to taste

1 cup

Wild Rice

2 1/2 cups

Chicken Stock or Broth


  1. In a large skillet, melt butter; saute onion, celery and green pepper until soft.

  2. Add sausage and cook until browned and crumbly.

  3. Add mushrooms, garlic and spices. Cook 3 to 5 minutes, stirring occasionally.

  4. Stir in rice until completely coated with meat and vegetables, and then add stock.

  5. Boil, reduce heat to low, and cook until liquid is absorbed, about 40 minutes.
