All Natural Pork Sausage Roll

Large Eggs

Tortilla Chips

1 cup

Salsa

1 (15 oz) can

Black Beans, drained

4 ounces

Cheddar Cheese, shredded

2 tablespoons

Cilantro, chopped

1/2

Avocado, diced

Hot sauce (optional)

Directions

  1. Heat oven to 400˚F.

  2. Crumble sausage into large sauté pan and cook over medium heat for 8 minutes, or until golden brown. Drain.

  3. Meanwhile, crack eggs into small bowl; whisk to scramble. Pour into small pan set over medium heat. Cook, stirring frequently, until just set – about 5 minutes. Remove from heat.

  4. Place half tortilla chips into 9-inch baking dish. Top with 1/2 cup salsa, half of beans, half of sausage, half of scrambled eggs and 2 ounces of shredded cheddar cheese. Create second layer with remaining ingredients.

  5. Cover with foil and bake 5-10 minutes, or until cheese melts. Remove from oven; top with cilantro and avocado. Serve with hot sauce, if desired.
