

Sausage Spaghetti Squash Boats
Healthy Spaghetti Squash Boats with Chicken Sausage
These Sausage Spaghetti Squash Boats make pasta night lighter without losing any of the flavor. Roasted spaghetti squash halves are filled with a savory mix of Jones Dairy Farm All Natural Golden Brown Chicken Sausage Links, sautéed peppers and onions, sliced olives, and marinara sauce, then topped with mozzarella and baked until bubbly.
Ingredients
- 1 spaghetti squash, baked
- 1 tablespoon avocado or olive oil
- 1/2 cup onion, chopped
- 1/2 cup black olives, sliced
- 1 (5 oz.) box Jones Dairy Farm Golden Brown All Natural Chicken Sausage Links, sliced
- 1 1/2 cups marinara sauce
- 1 cup mozzarella cheese
Directions
Preheat the oven to 450º F.
In a skillet, add oil, onions, and bell peppers. Sauté over medium low heat for about 10 minutes until they are translucent.
To the skillet, add olives, sliced sausage, and marinara sauce. Bring to a low simmer, and then remove from heat.
In a baking dish, place the baked spaghetti squash with the cut side up. Use a fork to loosen the strands from each squash half.
Divide the sauce between each squash half. Top with cheese.
Bake the stuffed squash for about 10 minutes, until the cheese is bubbly and has started to brown.
