Recipe by Joe Urban.
A Sweet and Savory Breakfast Sandwich for K12
A Jones Dairy Farm Pork Sausage Patty and a slice of cheese are layered between two slices of French toast and finished with a drizzle of sugar-free syrup. Everything heats together and holds hot until service, so it fits easily into a busy breakfast line.
Ingredients
- 2 whole French toasts
- 1 Jones Dairy Farm Pork Sausage Patty
- 1 slice cheese, pasteurized process, cheddar or American, low sodium
Directions
Keep the cheese refrigerated at 41°F or below until assembly. Preheat the oven to 350°F.
Place the French toast slices on a lined sheet pan. Bake for 5 to 7 minutes, or until heated through. Transfer to a hot holding cabinet and hold at 135°F or above until assembly.
Heat the sausage patties. Choose your oven:
- Convection oven: Place patties on a parchment-lined sheet pan. Bake at 350°F for 12 to 15 minutes, or until heated through.
- Combi oven: Set to 350°F with 30% humidity. Place patties on a parchment-lined sheet pan. Cook for 11 to 14 minutes, or until heated through.
Patties must reach an internal temperature of 165°F for 15 seconds.
Transfer heated patties to a steam table pan and hold at 135°F or above until service.
Place one sausage patty and one slice of cheese between two slices of French toast. Drizzle with 1 tsp sugar-free syrup and serve.
