

Homemade Bean and Bacon Soup

Homemade Bean and Bacon Soup from Taste and Tell starts with Jones Dairy Farm Dry Aged Bacon rendered crispy in a Dutch oven, then builds a base of onion, carrots, celery, and garlic cooked in the reserved bacon fat. Great Northern beans and chicken broth simmer for an hour before half the soup gets pureed and returned to the pot for a thick, creamy texture. Tomato sauce, lemon juice, and reserved bacon go in for a final 30-minute simmer. This gluten free bean and bacon soup recipe serves six and is the kind of hearty, smoky soup that earns a permanent spot in the weeknight rotation.
Ingredients
- 1 (12 oz.) package Jones Dairy Farm Dry Aged Bacon, diced
- 1 cup yellow onions, diced
- 1 cup carrots, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1-2 tablespoons lemon juice, to taste
- 3 (15 oz.) can Great Northern Beans, drained and rinsed
- 1 (8 oz.) can tomato sauce
- 1/4 teaspoon red pepper flakes
- salt and pepper, to taste
- 1 teaspoon fresh thyme, optional
- 1 cup sweet corn, optional
Directions
Cook bacon in soup pot or Dutch oven until crisp. Remove with slotted spoon to paper towel-lined plate. Discard all but 2 tablespoons of the bacon grease.
To the hot bacon grease, add onions, carrots, celery and red pepper flakes. Cook over medium heat until ingredients begin to soften, about 5 minutes. Add garlic and cook an additional minute. Stir in chicken broth and beans. Season to taste with salt and pepper. Bring to a slow boil; reduce heat to low and simmer for 1 hour.
Transfer half of the soup to blender or food processor. Process until smooth. Return puree to soup pot and stir. Add tomato sauce, 3/4 of the reserved bacon and lemon juice (and optional sweet corn and fresh thyme) and stir to combine. Let soup simmer until heated through, about 30 minutes. Serve topped with remaining bacon. Season to taste.

Leave a reviewI have made it a 3 times since i found it and it falls short of the mark. Taste just like bean soup without the smoky bacon flavor. I am disappointed 😞. I figured that with the high reviews of 5 that it was going to taste like bean with bacon soup. Now I have to look for another recipe. 😒
I use ham instead of bacon but by far the best recipe yet

I used canned navy beans but everything else was exact. This was easy, super delicious and is now on my favorite recipe list. Next time I am going to use great northern beans.
