- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 cup heavy cream
- 20 ounce package spinach and cheese ravioli
- 3 cups baby spinach
- 8 ounces mozzarella cheese, shredded
- parmesan cheese and fresh basil, for serving
Directions
Heat oven to 350°F. degrees. Grease a 9×12 baking dish with butter or non-stick cooking spray.
Heat a large skillet with high sides over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until it’s browned and fully cooked through. Add the onion and garlic. Turn the heat down to medium low. Cook until onion is slightly softened, about 3-4 minutes.
Add the vodka; bring to a boil then reduce to a simmer. Simmer until reduced by half. Add crushed tomatoes, dried basil, salt, and heavy cream. Bring to a boil then reduce to a simmer. Cover and simmer for 10 minutes.
Assemble. Spread a large spoonful of sauce on the bottom of the prepared baking dish. Line up half of the ravioli on the bottom of the skillet. Cover the ravioli with half of the sauce, making sure to spread it evenly over the ravioli. Sprinkle with spinach and half the cheese. Layer the rest of the ravioli on top of the first layer, followed by the remaining sauce and finally the remaining cheese.
Spray a large piece of foil with non-stick cooking spray. Cover the baking dish with the foil greased side down. Place in the oven and bake until bubbly, ravioli is cooked through and the cheese has melted, about 40 minutes.
Serve with fresh parmesan cheese and basil if desired.
