- Thin lavash flatbread wrapped around Jones Dairy Farm Deli Sliced Ham and along with seasoned scrambled eggs, Edam cheese, heirloom tomatoes, and onion jam.
- Edam is recommended for its mild, creamy melt, but Havarti, Gruyère, or Fontina all work well — use whatever fits your kitchen and price point.
Chef’s Notes
The onion jam is the component worth making in-house. A simple reduction of sliced yellow onions, butter, brown sugar, and a splash of sherry vinegar slow-cooked until deeply caramelized takes about 45 minutes but holds refrigerated for up to two weeks — batch it once and use it across the menu on burgers, sandwiches, and charcuterie boards.
Soft scramble the eggs until slightly underdone before assembly; the carryover heat inside the wrap will finish them. Overcooked eggs in a wrap make for a dry, dense bite that no amount of jam can fix.
Lavash crisps quickly once cut, so wrap to order or wrap tight in parchment for grab-and-go hold.
