The Menu Concept

Chef’s Notes
The pink peppercorn whipped goat cheese is the differentiator. Soften fresh goat cheese to room temperature, then whip in a stand mixer with a touch of cream and crushed pink peppercorns until light and spreadable. Pink peppercorns bring a floral, mild heat that pairs with the strawberry jam beautifully. Batch in the morning and it holds refrigerated for up to four days.
Use a quality slicer set thin but not paper-thin — you want layered ham that builds height in the slider without overwhelming the biscuit. Two or three folded slices per slider is the right ratio.
Make the strawberry jam in-house if possible. A simple cook of strawberries, sugar, and a squeeze of lemon takes 20 minutes and holds for two weeks refrigerated. Store-bought works in a pinch but lacks the brightness that makes this slider memorable.
Toast the biscuit briefly on the flat top, cut sides down, before assembly. It prevents the jam and whipped goat cheese from soaking in and turning the biscuit gummy.
