Bacon Meatball Pretzel Sliders

A Bar Snack Built for the Menu

Pretzel buns and bacon flavor are proven crowd-pleasers on their own, and this concept stacks both into a single handheld. Three Jones Dairy Farm Pork and Bacon Meatballs, a tangy dill pickle mustard, and crispy haystack onions turn a bar-snack favorite into a shareable that fits lunch, dinner, and late-night menus alike.

The Menu Concept

  • A trio of Jones Dairy Farm Pork and Bacon Meatballs stacked on a warm, toasted pretzel bun.
  • Topped with a dollop of tangy dill pickle mustard for acidity and cut through the richness of the meatball.
  • Finished with crispy-fried haystack onions for crunch and textural contrast.

The Jones Difference

Jones Pork and Bacon Meatballs are fully cooked and portion-controlled, so an operator gets a consistent three-meatball stack on every single slider without weighing or portioning ground meat in-house.

The bacon flavor is built into the product itself, which means no separate bacon rendering step and no risk of a soggy bun from bacon grease pooling under the meatball. That consistency matters more here than on a flat-format item like a pizza, because a slider lives or dies on whether every bite has the same ratio of meat to bun. Three uniform meatballs deliver that ratio every time.

Chef’s Notes

Warm the meatballs fully before assembly and hold them hot through service. A cold or lukewarm center is the most common failure point on a stacked slider, since the bun will insulate a cold interior rather than warm it.

Toast the pretzel bun cut-side down before building. An untoasted bun will turn soft and lose structure fast against the moisture from the mustard and the meatballs.

Apply the dill pickle mustard as a thin layer on the bottom bun, not on top of the meatballs. Mustard on top will run down the sides during plating.

Add the haystack onions last, right before the top bun goes on, so they stay crisp instead of steaming against the hot meatballs.

Three stacked meatballs create real height on a small bun. If operators report the bun splitting or the stack toppling during service, the fix is a slightly larger pretzel bun or a toothpick through the stack, not fewer meatballs. Don’t let a build problem turn into a smaller portion.
