Baked mac and cheese is a menu staple, but most versions stop at cheese and breadcrumbs. This concept adds a savory, glazed protein and a spicy BBQ finish, giving operators a shareable that reads as more substantial than a side dish without becoming a full entrée build.

The Menu Concept

  • Aged white cheddar cavatappi macaroni and cheese studded with crispy Jones Dairy Farm Pork and Bacon Meatballs.
  • Finished with spicy BBQ sauce, toasted sesame seeds, and chopped scallions.

The Jones Difference

Jones Pork and Bacon Meatballs are fully cooked, so building this dish is about layering flavor, not managing raw protein risk.

The meatballs can go into the dish, get glazed, and hold in a hot well or oven without an operator worrying about undercooked centers, which matters in a composed bake like this where the protein isn’t the last thing added before service.

The bacon flavor is built in, so the smoky, savory backbone of the dish comes from the meatball itself, not from a separate bacon component the kitchen has to render and add.

Chef’s Notes

Glaze the meatballs in the BBQ sauce before adding them to the mac and cheese, not after. A pre-glazed meatball holds its coating better through the bake than a raw drizzle applied at the end.

Toast the sesame seeds before topping. Raw sesame seeds are flat in flavor; toasting brings out the nuttiness that plays against the BBQ sauce.
