Chef’s Note
Aleppo pepper Hollandaise is the differentiator on this plate. Aleppo is fruity and slow-burning rather than sharp, so it complements the chorizo. Build your Hollandaise standard, then bloom a measured amount of Aleppo in warm butter before emulsifying. Start conservative, around half a teaspoon per quart, and adjust. It should read as warm and complex, not spicy.
Poached eggs on a biscuit Benedict require a dry landing. If the biscuit soaks through before the plate reaches the table, cut the biscuit, toast the cut faces, and plate immediately before saucing. The jalapeño cheddar biscuit is a flavor asset; protect the texture.
For volume service, consider par-poaching eggs in acidulated water and finishing to order in a hot water bath. Hold time is your enemy on a Hollandaise-based plate.
