Chef’s Notes
Gnocco fritto is straightforward — a simple yeasted dough of flour, water, lard or butter, and salt, rolled thin and cut into small rectangles or diamonds, then fried in neutral oil at 375°F until they puff and turn golden, about 2 minutes per side. They’re best served immediately but hold reasonably well in a low oven for up to 20 minutes during service.
Plate the ham alongside the gnocco fritto rather than wrapped around it — the visual contrast between the golden fried dough, the pink ham, the white mozzarella pearls, and the red peppers is what makes this dish a showstopper.
The hot honey drizzle is the finishing element that ties sweet, savory, and heat together. Apply at plating, not in advance.
