The Menu Concept
- Jones Dairy Farm Dry Aged Bacon, All Natural Pork Sausage Links, and Deli Sliced Ham served in a duo of achiote-dusted flour tortillas.
- Topped with creamy scrambled eggs, Mexican street corn, crispy onions, queso fresco, and fresh cilantro.
- Served with a side of salsa verde.
Chef’s Notes
The achiote dusting on the tortillas is a small step with an outsized impact on the final flavor. Brush warm tortillas lightly with neutral oil, dust with achiote powder, and char briefly on a dry flat top or open flame. This adds color, subtle earthiness, and signals to the guest that this isn’t a standard breakfast taco.
Prep the three proteins separately and hold them warm in individual hotel pans. Assembly to order takes under a minute and gives the line control over portioning. Don’t combine the proteins in advance — they hold better and the distinct layers read better on the plate.
The salsa verde is worth making in-house. Roasted tomatillos, jalapeño, garlic, cilantro, and lime blended smooth takes 20 minutes and holds refrigerated for five days. A jarred salsa verde works in a pinch but won’t carry the same freshness against the richness of three proteins and scrambled eggs.
