
Chicken Chorizo Sausage Brunch Bagel

This K-12 school lunch recipe starts with a Jones Chicken Chorizo Sausage Patty, stacked with a egg patty, pepper jack cheese, and guacamole on a toasted whole-grain bagel. It’s built to meet USDA meal pattern requirements and easy to execute for high-volume service, but bold enough that students will actually eat it.
Ingredients
- 50 Jones Dairy Farm Chicken Chorizo Patties
- 50 1.25 oz. egg patties
- 50 whole grain sliced bagels
- 1 pt., 1 c., 2tbsp. guacamole, frozen
Directions
Preheat oven to 350°F.
Place Jones Chicken Chorizo Sausage Patties on a parchment-lined sheet pan. Bake for 12–15 minutes, until hot (165°F). Hold at 135°F or above until service.
Place egg patties in hotel pans coated with non-stick spray. Cover with foil and heat for 10 minutes, until hot (145°F). Hold at 135°F or above until service.
Toast bagels in oven until warm.
Assemble each sandwich: place the bottom bagel half on a clean work surface, then layer with 1 chorizo patty, 1 slice pepper jack cheese, and 1 egg patty.
Spread 1 tablespoon guacamole on the inside of the top bagel half. Close and serve immediately.
Hold at 135°F or above until service. Serve 1 sandwich per student.
