

Green Goddess Breakfast Sandwich

Fresh herbs, creamy avocado, and Jones Golden Brown Turkey Sausage Patties come together on toasted sourdough with a house-made green goddess sauce. A lighter, flavor-forward breakfast sandwich built for a menu that means business.
Ingredients
- 4 Jones Dairy Farm Golden Brown Turkey Sausage Patties
- 6 eggs
- 1 tablespoon milk
- 2 tablespoons minced chives, divided
- 1 tablespoon butter
- 1/2 cup Greek yogurt
- 1/2 cup mixed herbs (dill, mint, tarragon or basil)
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 1 tablespoon olive oil
- 1 garlic clove
- 1/2 teaspoon Dijon mustard
- 1 avocado, sliced
- 8 slices sourdough bread, toasted
- 1/2 cup packed baby spinach leaves
Directions
Prepare sausage according to package instructions.
Whisk eggs with milk. Season with salt and pepper. Add 1/4 cup chopped parsley and 1 tablespoon chives. Whisk to combine.
Place skillet over medium heat with 1 tablespoon butter. Add eggs and cook until scrambled and no longer runny, about 5 minutes.
Combine yogurt, remaining parsley and chives, herbs, lemon juice, olive oil, garlic and Dijon in a food processor or blender until smooth. Season with salt and pepper.
Assemble sandwiches by layering scrambled eggs, a sausage patty, avocado slices, and baby spinach on one slice of toasted sourdough. Spoon green goddess sauce over the top, close with the second slice, and repeat for remaining sandwiches.
