| 6 | toasted bagels, any variety |
| 12 pieces | Jones Dairy Farm Dry Aged Bacon, fried crispy |
| 12 slices | tomatoes |
| 6 small handfuls | baby arugula |

In large bowl add hard boiled eggs, mayonnaise, yellow mustard, kosher salt and black pepper. Use potato masher to mix until smooth. Add additional salt and pepper to taste.

Top each bagel with egg salad, 2 slices bacon, 2 slices tomatoes and small handful of baby arugula.
