This breakfast sandwich recipe fills bagels with creamy egg salad, crispy bacon, tomatoes and arugula. Looks like we’re having breakfast for dinner!

This recipe is made with Jones Dry Aged Bacon.

8 oz Hickory Bacon
ingredients
18 hard boiled eggs, shells removed
1 cup mayonnaise
1 tablespoon yellow mustard Kosher salt and pepper, to taste
6 toasted bagels, any variety
12 pieces bacon, fried crispy
12 slices tomatoes
6 small handfuls baby arugula
DIRECTIONS
In large bowl add hard boiled eggs, mayonnaise, yellow mustard, kosher salt and black pepper. Use potato masher to mix until smooth. Add additional salt and pepper to taste.

Top each bagel with egg salad, 2 slices bacon, 2 slices tomatoes and small handful of baby arugula.
