
California Sunrise Breakfast Sandwich

Ingredients
1 package | |
4 | Brioche buns |
4 slices | Pepper jack cheese |
1 cup | Mixed greens |
4 | Eggs |
1 | Avocado, mashed |
1 tablespoon | Butter |
1 tablespoon | Olive oil |
3 tablespoons | Roasted tomatoes (or finely diced fresh tomatoes) |
2 tablespoons | Chopped fresh cilantro |
1/3 cup | Mayonnaise |
Salt and pepper, to taste |

Preheat oven to 350°F. Add sausage patties to a parchment-lined baking sheet; bake for 6-8 minutes or until heated through.

While the sausage cooks, butter buns and toast in a skillet over medium heat; set aside. In the same pan, cook eggs to preferred doneness.

Prep the remaining ingredients. Mash avocado in a small bowl. Toss greens with olive oil, salt and pepper. Combine roasted tomatoes, cilantro and mayo in a small bowl; season with salt and pepper.

Arrange sandwiches. Spread 1/4 of the smashed avocado on the bottom of one bun. Layer with chicken sausage, a slice of pepper jack cheese, cooked egg, 1/4 of the tossed greens and 1/4 of the sauce. Top with bun and repeat with remaining ingredients.
