Fresh and bright, this California Sunrise Breakfast Sandwich layers a Jones Dairy Farm Golden Brown All Natural Chicken Sausage Patty on a toasted brioche bun with smashed avocado, pepper jack cheese, a fried egg, olive oil-tossed mixed greens, and a homemade tomato-cilantro aioli. It comes together in 20 minutes and tastes like something you’d order at a good brunch spot.
Ingredients
- 1 (5 oz.) package Jones Dairy Farm Golden Brown All Natural Chicken Sausage Patties
- 4 brioche buns
- 4 slices pepper jack cheese
- 4 eggs
- 1 avocado, mashed
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 tablespoons roasted tomatoes (or finely diced fresh tomatoes)
- 2 tablespoons chopped fresh cilantro
- 1/3 cup mayonnaise
- salt and pepper, to taste
Directions
Preheat oven to 350°F. Add sausage patties to a parchment-lined baking sheet; bake for 6-8 minutes or until heated through.
While the sausage cooks, butter buns and toast in a skillet over medium heat; set aside. In the same pan, cook eggs to preferred doneness.
Prep the remaining ingredients. Mash avocado in a small bowl. Toss greens with olive oil, salt and pepper. Combine roasted tomatoes, cilantro and mayo in a small bowl; season with salt and pepper.
Arrange sandwiches. Spread 1/4 of the smashed avocado on the bottom of one bun. Layer with chicken sausage, a slice of pepper jack cheese, cooked egg, 1/4 of the tossed greens and 1/4 of the sauce. Top with bun and repeat with remaining ingredients.
