Cheeseburger Onion Rings, Wrapped in Bacon
Thick onion rings packed with seasoned ground beef and sharp cheddar, wrapped in Jones Dairy Farm Cherrywood Smoked Bacon, and smoked until browned and sticky with BBQ sauce. Dip them in a cool, herby homemade ranch for a cheeseburger, onion ring, and bacon appetizer all in one bite.
Ingredients
- 2 lb. 85/15 ground beef
- 6 oz. shredded sharp cheddar
- 3-4 large yellow or Spanish onions
- BBQ seasoning
- BBQ sauce
- fresh chives, for serving
- Homemade Ranch
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup buttermilk
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1–2 teaspoons fresh lemon juice
Directions
Slice the onions into 3/4–1 inch thick rounds. Separate the rings and pair a large outer ring with a smaller inner ring.
Mix the ground beef and cheddar, then pack the mixture between the onion rings.
Wrap each stuffed onion ring completely with Jones Dairy Farm Cherrywood Smoked Bacon Slices and season with BBQ seasoning.
Smoke at 275–300°F until the beef reaches about 150–155°F and the bacon is browned and rendered.
Brush with BBQ sauce and continue cooking until the beef reaches 160–165°F and the sauce is tacky.
For the ranch, whisk all ingredients together until smooth and refrigerate until ready to serve.
Rest the onion rings for about 5 minutes, finish with fresh chives and serve with homemade ranch.
