These Buffalo Chicken Meatball Sub Sandwiches heat Jones No Antibiotics Ever Chicken Meatballs in a buttery garlic buffalo sauce, then pile them into soft hoagie rolls with a crisp celery, cabbage, and radish slaw and a generous drizzle of ranch or blue cheese dressing. Bold, satisfying, and on the table in 30 minutes.
Ingredients
- 1 1/2 cups buffalo sauce
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1 cup shredded cabbage
- 1/2 cup celery, thinly sliced, including leaves
- 1/4 cup radish, thinly sliced
- 1/4 cup red onion, thinly sliced
- 4 sub rolls, cut in half
- 1/2 cup ranch dressing
- 1/2 cup blue cheese, crumbled
Directions
Heat a large sauté pan over medium heat. Add buffalo sauce, butter and garlic; simmer until slightly thickened and combined. Stir in the chicken meatballs and heat through.
Mix cabbage, celery, radish and onion in a large bowl. Season with salt.
Add meatballs to your buns and top with additional buffalo sauce. Drizzle ranch over each, and top with an equal amount of blue cheese and celery slaw. Enjoy!
