This Canadian Bacon Broccoli Casserole is a hearty, low-carb dish that combines tender broccoli, cauliflower rice, and creamy cheeses with savory Jones Dairy Farm Canadian Bacon for a satisfying meal. This easy-to-make casserole is perfect for a wholesome weeknight dinner or a comforting brunch option.
Ingredients
- 3 eggs, whisked
- 1/3 cup heavy whipping cream
- 1/2 cup grated parmesan cheese
- black pepper to taste
- 6 cups cauliflower rice
- 2 (6 oz.) packages Jones Dairy Farm Canadian Bacon, diced or quartered
- 4 cups broccoli florets
- 2 cups shredded cheddar cheese
Directions
Preheat oven to 425º F.
Whisk eggs, heavy whipping cream, parmesan cheese, salt and pepper in a medium mixing bowl.
Add the cauliflower rice, Canadian Bacon, broccoli and egg mixture to a 9×9-inch casserole pan and mix.
Top with shredded cheddar cheese, cover and bake for 35 minutes. Uncover and bake for an additional 10 minutes, or until cheese is golden brown.

This was delicious & satisfying without being heavy. I used store bought frozen cauliflower rice & broccoli florets. Chopped the broccoli a bit finer & let both the broccoli & cauliflower thaw. After mixing the egg, cream, parmesan cheese, etc, I combined everything together in a bowl before turning into baking dish. My guests appreciated the generous portions of veggies. And because there’s no bread like in traditional breakfast casseroles, you can serve a nice bread on the side along with fresh fruit. I’m making this again.
