Ingredients

cream cheese, room temperature

8 oz.

mascarpone cheese

1 cup

pecans, toasted and chopped

2 tablespoons

honey

1 1/2 cup

Medjool dates, small dice

1 1/2 cup

Jones Dairy Farm Canadian Bacon, small dice

1/2 cup

bleu cheese crumbles (optional)

toasted pita chips and assorted crackers, for serving

Directions

  1. Lay a large sheet of plastic wrap on the counter.

  2. In a medium bowl, combine the cream cheese, mascarpone, pecans, honey, and dates.

  3. Using a food processor or electric mixer, mix until fully incorporated.

  4. Use your hands to form the mixture into a round ball.

  5. Place the cheeseball on the plastic wrap and wrap tightly. Refrigerate for at least 30 minutes.

  6. Spread the diced Canadian bacon and bleu cheese crumbles on a plate. Unwrap the chilled cheeseball and roll it in the mixture, pressing gently to coat the entire surface.

  7. Transfer the coated cheeseball to a serving platter and press in any remaining Canadian bacon to fill uncovered spots.

  8. Surround the cheeseball with toasted pita chips, crackers, or crostini. Enjoy!

  9. Notes: If you don’t enjoy the flavor of bleu cheese, omit it and replace with additional diced Canadian bacon.

     

    Recipe can be cut in half to serve 4–6.
