

Canadian Bacon Quesadillas
Crispy, Cheesy, and Done Before the Coffee Finishes Brewing
These Canadian Bacon Quesadillas cook scrambled eggs directly into the tortilla for a crispy, unified shell, then layer in Jones Canadian Bacon and melted cheese before flipping to golden. Ready in 10 minutes and fully customizable with your favorite toppings — sour cream, salsa, or both.
Ingredients
- 8 slices Jones Dairy Farm Canadian Bacon
- 4 tortillas or wraps of choice
- 4 eggs
- salt and pepper, to taste
- sour cream, salsa, or any other of your favorite quesadilla toppings
Directions
Whisk eggs in a small bowl and pour 1/2 of the mixture into a greased skillet. Cook over medium heat until eggs set, reduce heat to medium-low. Season with salt and pepper to taste.
Place first tortilla or wrap on top of egg mixture and gently press down. Heat for 2 minutes or until eggs and tortilla join together and flip.
Add shredded cheese and fan 4 slices of Canadian bacon slices on top of egg mixture and top with second tortilla or wrap and cook until cheese is melted, and tortilla is golden brown. Flip, again.
Cook an additional 1-2 minutes so both sides are golden brown.
Repeat the same steps for the second quesadilla, use remaining egg mixture and two tortillas.
Slice into quarters and serve with sour cream and salsa.
