

Crispy BLT Potato Salad

This Crispy BLT Potato Salad takes a classic favorite to the next level with the bold, savory flavor of Jones Dairy Farm Dry Aged Bacon. Paired with crispy smashed tater tots, fresh spinach, and juicy grape tomatoes, it’s an irresistible twist on the traditional BLT!
Ingredients
- 1 package Jones Dairy Farm Dry Aged Bacon, cooked and crumbled
- 3 cups frozen tater tots
- 3/4 cup mayo
- 1 teaspoon garlic powder
- 2 tablespoons fresh chives, finely chopped
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 2 cups spinach, roughly chopped
- 10 ounces grape tomatoes, chopped
Directions
Heat oven according to tater tot package directions. Cook for 10 minutes. Remove and smash using the flat side of a greased glass or a measuring cup. Season with salt and return to oven for 30 minutes or until crispy. Let cool 5 minutes.
In large bowl, combine mayo, Greek yogurt, garlic powder, chives, salt and black pepper. Mix until well combined.
Add crispy potatoes, crumbled bacon, spinach and tomatoes. mix until creamy and well combined.
