
Ham and Vegetable Fried Rice
Jones Ham Turns Leftover Rice Into Dinner
Ham and Vegetable Fried Rice is a 15-minute weeknight stir-fry built on chilled rice, Jones Dairy Farm Breakfast Ham, crisp red bell pepper, snow peas, and garlic, all tossed in a sauce of wheat-free tamari, seasoned rice vinegar, and red pepper flakes. Finished with optional cilantro, green onions, and chopped peanuts, this gluten free ham fried rice recipe serves four and comes together faster than takeout.
Ingredients
- 2 teaspoons canola or vegetable oil
- 1 red bell pepper, cut into short, thin strips
- 2 cups snow peas, diagonally halved
- 3 cups cooked brown or white rice, chilled
- 1 (6.4 oz.) package Jones Dairy Farm Breakfast Ham Slices, cut into 1/2 inch pieces (could also use Jones Dairy Farm No Antibiotics Ever Heritage Uncured Ham Steak, cut into 1/2 inch pieces)
- 1/4 cup wheat free organic tamari sauce
- 2 tablespoons seasoned rice vinegar
- 1/4 teaspoon crushed red pepper flakes
- Optional garnishes: chopped cilantro or green onions, chopped peanuts or cashews
Directions
Heat oil in a 12″ nonstick skillet or wok over medium-high heat. Add bell pepper and snow peas; stir-fry 3 minutes.
Add garlic; stir-fry 1 minute or until vegetables are tender.
Add rice and ham; stir-fry until heated through, about 2 minutes.
Combine tamari, vinegar and pepper flakes. Add mixture to skillet; stir-fry 2 minutes or until heated through. Garnish as desired.
