Blended Cottage Cheese Is the Secret to a Better Egg Cup
These High Protein Sausage Egg Cups are a simple, satisfying way to start your day. Made with eggs blended with cottage cheese for a creamy texture, plus Jones Dairy Farm All Natural Pork Sausage Links, melty mozzarella, and fresh veggies, they’re packed with flavor and protein. Perfect for busy mornings, weekend meal prep, or a grab-and-go breakfast the whole family will love.
Ingredients
- 8 eggs
- 1 cup cottage cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package Jones Dairy Farm Golden Brown All Natural Pork Sausage Links, heated according to package instructions and sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup diced green pepper
- 1/4 cup diced onion
- 1 bunch chives, diced
Directions
Heat oven to 375°F. Grease silicone egg mold, place on a baking sheet and set aside.
Add eggs, cottage, garlic powder, onion powder, salt and pepper to a blender. Blend for 5-6 seconds, just until creamy. Do not over mix or your egg cups will deflate. Pour into greased molds.
Divide sausage, cheese, green pepper, onion and chives between each egg bit. Pour boiling water onto sheet pan until it reaches halfway up the outside of the egg mold. Bake for 30-35 minutes or until eggs are set. Let sit 10 minutes before removing from egg mold.
