

Lasagna Soup

All the Flavor of Lasagna, None of the Layers
Savor the rich, comforting flavors of this hearty lasagna soup, made irresistible with the savory goodness of Jones Dairy Farm All Natural Pork Sausage Roll. This dish brings all the best parts of lasagna into a cozy bowl, with none of the hassle.
Ingredients
- 1 tablespoon olive oil
- 1 cup diced white onion
- 4 cloves garlic, minced
- 16 oz. Jones Dairy Farm All Natural Pork Sausage Roll
- 1 tablespoon Italian seasoning
- 1 tablespoon fennel seed
- 1 teaspoon salt
- 24 oz. marinara sauce
- 16 oz. beef or chicken broth
- 8 oz. lasagna noodles, broken into about 1-inch pieces
- Ricotta Mixture:
- 8 oz. ricotta cheese
- 1 cup finely grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic salt
- Red pepper flakes
- Fresh basil, for garnish
Directions
Heat olive oil in a large Dutch oven or soup pot over medium heat. Add onion and cook until soft, stirring occasionally, about 4-5 minutes.
Add garlic, ground beef, pork sausage, Italian seasoning, fennel seed and salt. Cook 7-9 minutes or until meat is cooked through, breaking it up as it browns. Drain any excess grease if necessary.
Add marinara sauce and broth; bring to a boil. Reduce heat to low and simmer for about 20 minutes.
Meanwhile, cook pasta according to package instructions, just until al dente.
Make the ricotta mixture. Stir together ingredients in a medium bowl. Set aside for serving.
Divide cooked pasta between bowls and top with a ladle of soup. Add a spoonful of ricotta mixture and garnish with red pepper flakes and fresh basil if desired.
