These Leftover Mashed Potato Waffles turn holiday leftovers into something genuinely crave-worthy. Mashed potatoes and stuffing are folded with browned Jones Pork Sausage Roll, shredded cheddar, and a light batter, then cooked until the edges are crispy and the inside stays tender. Ready in 30 minutes with almost no cleanup.
Ingredients
- 2 Tablespoons vegetable oil
- 1/4 cup buttermilk
- 2 large eggs
- 1/2 cup leftover stuffing
- 1 cup shredded cheddar cheese
- 1 cup Jones Dairy Farm All Natural Pork Sausage Roll, crumbled and browned
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
Directions
Preheat waffle iron.
Whisk oil, buttermilk and eggs in a large bowl. Add mashed potatoes, stuffing, cheese and sausage; mix well.
Whisk flour, baking powder and baking soda in a small bowl. Gently fold dry ingredients into potato mixture until well combined.
Spray both sides of waffle iron with non-stick cooking spray. Place 1/4 – 1/2 cup of the mashed potato mixer onto waffle maker, depending on the size of your waffle iron. Spread into an even layer. Cook until golden brown and crispy, about 3 minutes
