| 2 cloves | garlic, minced |
| 5 cups | chicken broth |
| 1 (14.5 oz.) can | diced tomatoes, drained |
| 1 cup | thinly sliced carrots |
| 2 tablespoons | fresh basil, minced |
| 1 teaspoon | dried oregano |
| 1 (8 oz.) can | tomato sauce |
| 1 1/2 cups | zucchini, sliced |
| 8 oz. | fresh tortellini |
| 2 cups | fresh spinach |
freshly grated Parmesan |

In large pot or Dutch oven, cook sausage over medium heat until browned and cooked through, breaking it up as it cooks. Add onion and garlic and cook until softened, about 5 more minutes.

Stir in chicken broth, drained tomatoes, carrots, basil, oregano and tomato sauce. Reduce heat to medium-low and cook uncovered for 30 minutes.

Add zucchini and cover. Cook for an additional 20 minutes.

Uncover and add tortellini and spinach. Cook for 10 minutes or until tortellini is soft. Serve topped with Parmesan cheese.
